If you’re like me, you might think that collard greens are a cooked way down, deep Southern homestyle dish. Well, after reading Alicia Silvestone’s book “The Kind Diet,” I’ve found a whole new appreciation for these green leafy babies!
Collard greens are one of the best sources of Vitamins K, A, C and are high in Calcium, Folate, Manganese and fiber. But possibly most surprising is that they have the highest Cholesterol lowering ability of all the common cruciferous vegetables!
