Warm up this Vata Winter Season with a bowl of steaming hot, dairy-free Organic Potato Leek Soup!
A super easy and delicious recipe, this root based soup will ground and sooth Vata in a season filled with cold, dry and rough elements that aggravate Vata.

Ingredients:
- 1 lb of organic red potatoes or white waxy potato chopped fine
- 4 leeks whites and light greens sliced thinly
- 1 tsp himalayan rock salt
- 1/2 tsp organic black pepper
- 1/2 tsp organic paprika
- 1/2 tsp organic garlic powder
- 1/2 tsp organic onion powder
- 1 carton organic almond mil
- optional – herbed olive oil for garnish
- organic ghee
1. Boil potatoes in water until soft ~ 15min then drain and set aside
2. Saute leeks in 2-3 tsp of ghee until soft ~8min
3. Add all spices to leeks and cook 3min more, stirring gently
4. Mix in leeks with potatoes and blend with a hand emulsion blender or in batches in a food processor
5. Return soup mixture to potato pot (will be thick)
6. Add in carton of almond milk, blend well and re-season according to taste
7. Optional – Drizzle herb infused olive oil over soup
