If you’re not already aware of the amazing health benefits of garlic, you are most likely aware of its lovely pungent aroma and flavor.
Ayurveda views Garlic with the gunas (qualities) of katu (pungent) and tamasic (heavy, grounding, earthy).
In a Yogic path, yogis abstain from tamasic food such as garlic and onions. Ayurveda, however uses garlic sparingly and in specific cases such as with overactive Vata in order to ground mind, body and spirit.
Here’s a fabulous garlic confit recipe from foodbuzz.com that will lessen the katu guna of garlic and make it easier to digest while reaping its healing qualities.
Enjoy!
