Today’s post is about Beets, beets and more beets!
I must confess that for most of my life, I’ve been afraid of these little jeweled-tone babies. But, after a wonderful Ayurvedic cleanse And the introduction to delicious Golden Beets, I can now say that Beets of all varieties are a much more familiar food in my diet.
Beets are Incredibly DETOXIFYING. They thin bile from the bile duct, liver and gallbladder and are able to aid the elimination of toxins throughout the digestive system. Beets are an excellent laxative and can relieve gastrointestinal discomfort. Beets are purifying and cooling to the blood. They have alkaline properties which modulate blood pH and reduce inflammation. They also are high in bioflavonoids which are known for anti-allergic, anti-inflammatory, anti-microbial and anti-cancer activity.
Ayurveda views beets as both Pitta aggravating when Raw and Pitta pacifying when cooked. If you have predominant Kapha constitution, try eating shredded raw beets with lemon juice to rev up your digestive system and thin the bile. If you are Vata or Pitta, try them cooked/sauteed. *Beets are also really super to make with fresh fruit and vegetable juices! *Be sure to add fresh fruit such as apples or veggies such as carrots with your beet juice as drinking beet juice alone may cause an allergic reaction or anaphylaxis.
